The Pão Saloio that best represents Sintra

Padaria Saloia's pão com chouriço (bread with chorizo) first came to prominence in street vending fifty years ago, after Gonçalo's grandmother was invited by the Festival Committee in honor of Our Lady of the Cape.

Over the course of almost half a century, the product's success and recognition have taken shape in street vending, so much so that, after that invitation, its presence at fairs around Sintra has multiplied.

If flour is Gonçalo's grandmother's secret, his dream has always been to open a place selling bread and other regional products in Sintra.

Cherished for years, the dream came true and, in 2021, Salomé Patrão and Horácio Patrão, Gonçalo's aunt and father, opened Padaria Saloia, located in one of Sintra's busiest streets.

Gonçalo says that the experience in the space has been incredible and that "lots of people come to Padaria Saloia and speak highly of Sintra's products".

Proud of his family and entrepreneurial roots, he says: "My grandmother didn't just take flour and make bread, she developed a high-quality mixture that allows for high hydration, resulting in a unique bread, crunchy on the outside and soft on the inside."
